Head Chef Adrian Barron has extensive knowledge of Mandurah and the Peel Region's best local produce, bringing years of culinary experience and dynamic energy to The Sebel Mandurah's breakfast menu and functions and event catering on the Mandurah waterfront.

What or who inspired you to be a chef?

My grandmother was a chef. I used to spend a lot of time with her, reading through cookbooks together and watching her cook some amazing meals.

What lessons did you take from your early experiences?

Patience and learning not to stress - as that is when you lose your concentration on the plate.

What do you think makes Mandurah such a vibrant dining destination?

The freshness of the food and access to outstanding local produce. You also can’t beat being near the water for the buzzing coastal atmosphere. It’s a magical dining experience, especially in summer.

What is one ingredient you could not live without?

Butter!

What are your influences or cooking style?

My time living in Switzerland really developed who I am as a chef. During this time, I learnt valuable French cooking techniques - which still influence my cooking style today.

In Switzerland, I also spent time travelling to the farms to speak with the farmers and this sparked my love for sourcing amazing fresh produce. It was also during this time that I honed by skills in Charcuterie.

Where do you go out to eat?

Thai is my favourite cuisine. For anyone visiting The Sebel Mandurah I would recommend visiting the nearby Jasmine Thai Restaurant – it is my favourite restaurant in Mandurah.

As well as having beautiful water views, the flavours are authentic. Even better, the restaurant is only 300m or a 4-minute walk from the hotel.

What is your favourite dish on The Sebel Mandurah's breakfast menu?

The Eggs Benedict. It is a quintessential breakfast dish that is decadent enough for when you're in holiday-mode.

On The Sebel Mandurah's breakfast menu we use only free-range poached eggs served on a traditional toasted English muffin. We then layer it with ham and top it with our warm, creamy house-made Hollandaise sauce. Add some freshly chopped chives and you have a real winner to fuel your Mandurah holiday adventure.

Hollandaise sauce is an emulsion of egg yolks, melted butter, and lemon juice. It can be tricky to get ‘just right’ but no Eggs Benedict is complete without it.

For an extra boost of nutritious vegetables, we also offer a delicious Eggs Florentine that comes layered sautéed spinach instead of ham, and grilled cherry tomatoes for a kick of sweetness.
